For many a gluten-free diet is not a matter of fashion, for those diagnosed with autoimmune diseases the choice is not really, it becomes a serious health problem.
According to WebMD, Celiac is an autoimmune disease that makes the patients allergic to gluten.
“Gluten is a protein found in wheat, barley, rye, and other grains. It is the protein that makes dough elastic and gives bread its chewy texture,” Explains the website. “When someone with celiac disease eats something with gluten, their body overreacts to the protein and damages their villi, which are very small finger-like projections found along the wall of the small intestine.”
When the villi are damaged, the small intestine can not correctly absorb nutrients from food. With time, this can lead to malnourishment, infertility and certain cancers.
Often finding what to eat becomes very difficult with very little options available especially when eating out.
“I don’t feel safe eating in restaurants anymore,” Said Mike Trendwoski, who was diagnosed with celiac disease last year. “The only place where I can eat without worries is Yum-Yums”
Yum-Yums is the only fully gluten-free restaurant in the Syracuse area. They offer a wide variety of food that goes from hamburgers to onion rings and even pizza without gluten.
They also offer baked goods and cater for big events like weddings.
